Curious as to why I am posting about food? Well for starters, I love it (LOL) secondly, I want to add a couple other categories to my blog. I had always wanted to have a beauty and lifestyle blog - I love to travel, discovering new and old restaurants, visiting food fairs and other such things. And while this post is quite spontaneous, I couldn't help but want to share this delicious avo-on-toast lunch I created.
I've never had avocado on toast sans bacon. I'm a raging carnivore and who doesn't love the combination of the two? Yummmmm! But this Saturday I gave the vegetarian option a bash and delighted in the result!
Recipe
Two slices low GI oats & seed loaf
One ripe avocado
One small onion
Lemon juice
Sea Salt
Cheddar cheese
One ripe tomato
Black pepper
Cut the ripe avocado in half and remove the pit. Scoop the ripe flesh into a bowl, add a 1/2 teaspoon of lemon juice, and add a pinch of sea salt to taste. Mash the ingredients together using a fork, keeping the texture slightly chunky.
Spread 1/2 of the mash on one slice of toast and the remaining half on the other slice of toast. Garnish each slice with a thin slice of tomato and a light sprinkling of grated chedder cheese. Add black pepper to taste

Serve immediately!
